At hawker centres and road-side stalls around Malaysia, you will find people fanning long troughs of smoky charcoal fires with fans, cooking skewers of irresistible slices of meat pre-marinated in lemongrass and spices. The smell of satay cooking is absolutely irresistible!
Skewers of chicken satay are a perennial crowd pleaser and perfect for any summer barbecue. Of course, they can also be grilled indoors, but there is nothing better than satay cooked over smoky flames!
For the first time in years you can enjoy Mandy Yin's chicken satay which was the starting point for everything else that has since followed in Sambal Shiok. Mandy's peanut sauce is runnier than the traditional sauce served with satay because it was originally meant to provide moisture for the chicken satay burger at my street-food stall. It has nevertheless been a hit since day one.
