This classic Massaman style Northern Thai curry paste is made to a traditional recipe using ingredients such as dried chillies, garlic, shallots alongside warming spices such nutmeg and mace. Mild in heat but richly aromatic, this style of curry paste traces its history through the spice routes from Persia. Often served with peanuts in, this curry works especially well with root vegetables such as boiled or roasted squash, potatoes or Jerusalem artichokes.
