At the heart of Thai curry pastes are fresh, aromatic ingredients, pounded to release their flavour. However, commercial curry pastes often include preservatives, and tend to be more heavily salted than you would find in Thailand. All this is necessary because they're designed to have an (unrefrigerated) shelf life of many months, by which time the vibrancy of the fresh ingredients and aromatics is substantially dulled. There's a reason curry pastes are made fresh in Thai markets!
