This classic Massaman style Northern Thai curry paste is made to a traditional recipe using ingredients such as dried chillies, garlic, shallots and shrimp paste alongside warming spices such nutmeg and mace. Mild in heat but richly aromatic, this style of curry paste traces its history through the spice routes from Persia and is traditionally used to prepare massaman style curries with meats such as beef, duck or chicken.
